  • 1 kilo pork backbone

  • Cook the pork in a pressure cooker with enough water, salt, onion, and garlic for 40 minutes. Remove the meat and set aside.
  • Blend the onion, green tomatoes, garlic, chiles, salt, pepper, and chicken broth. Set aside.
  • Heat a bit of oil in a pan and cook the potatoes for 5 minutes. Then, add the sauce, the cactus, and the meat and cook for 10 more minutes or until all the ingredients are well cooked.
  • Serve the pork backbone in green sauce and accompany it with rice and tortillas.
