Puff Pastry Meat Roll

Delicious puff pastry roll, filled with meat and dried fruits like strawberry, mango, cranberry, and walnut accompanied by goat cheese. Served with a salad of fresh greens and rich nougat, ideal for any occasion.

  • 1/4 cups olive oil, vinaigrette
  • 2 pinches salt
  • 1 pinch pepper
  • 2 tablespoons thyme, chopped

  • Preheat the oven to 200°c.
  • Heat the oil in a pan over medium heat, add the onion and garlic, sauté for 2 minutes until it changes color.
  • Add the bacon, fry for 1 minute, incorporate the meat and cook for 10 minutes. Season and remove excess fat.
  • Add the meat to a bowl, incorporate the walnut, the cranberry, and mix well. Chill this preparation and add the goat cheese, mix and set aside.
  • Sprinkle a little flour on the table and roll out the puff pastry until you have a rectangle about 1 cm thick.
  • Place the filling on the puff pastry leaving 1 cm free. Roll it up without letting the mixture spill out. Brush the free space with egg and seal.
  • Place the roll on a baking tray, brush and bake for 25 to 30 minutes until golden.
  • For the salad or side dish: Add the spinach, arugula, halved cherry tomatoes, chopped dried fruit, and nougat to a salad bowl. Set aside.
  • For the vinaigrette: Add salt, pepper, thyme, and vinegar in a small bowl, mix well and gradually incorporate the oil while whisking.
