In a pot, add the oil and heat on low flame. Fry the onion, garlic, and tomato for 5 minutes and add the brains. Let cook for 10 minutes, covered.
Add the epazote, salt, and pepper, and cook for another 10 minutes or until all the liquid has evaporated. Set aside.
On the tortillas, add two teaspoons of filling and close with two toothpicks. Set aside.
Heat enough oil in a pot to brown the quesadillas. When the oil is hot, add them and let them brown for 5 minutes. Remove them from the oil and drain on absorbent paper.
Serve in a wooden bowl and accompany with a delicious guacamole.
