Quesadillas

  • vegetable oil
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups tomato, chopped
  • 2 cups pork brains
  • 1/4 cups epazote, chopped
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 12 tortillas

  • In a pot, add the oil and heat on low flame. Fry the onion, garlic, and tomato for 5 minutes and add the brains. Let cook for 10 minutes, covered.
  • Add the epazote, salt, and pepper, and cook for another 10 minutes or until all the liquid has evaporated. Set aside.
  • On the tortillas, add two teaspoons of filling and close with two toothpicks. Set aside.
  • Heat enough oil in a pot to brown the quesadillas. When the oil is hot, add them and let them brown for 5 minutes. Remove them from the oil and drain on absorbent paper.
  • Serve in a wooden bowl and accompany with a delicious guacamole.
