Soak the beans the night before. The next day, boil them with 4 cups of water (they should be completely covered) and a garlic clove, cover the pressure cooker, and cook for 30 minutes.
Meanwhile, prepare a sofrito with chopped onions, minced garlic, and finely sliced peppers, then add the bacon, spices, and salt. Incorporate the bean broth, the beans, bay leaf, and previously washed rice, cover the pot, and let it boil, then reduce the heat, stir, and cook until the rice is done (approximately 15 to 20 minutes).
