Cuban Rice

  • 1 kilo pork belly, in pieces
  • 1 onion
  • 4 cloves garlic, finely chopped
  • 4 tablespoons ají
  • 4 teaspoons salt
  • vegetable oil
  • 2 1/2 cups long grain rice
  • 1/4 cups whole black beans, precooked
  • 3 1/2 cups bean broth
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • 1 teaspoon cumin
  • 1/4 teaspoons cilantro, for presentation

  • In a skillet over medium heat, sauté the pork belly and season. Once it is fried and golden, add the onion and garlic. Cook on low heat for 10 minutes, add the pepper and cook for 5 more minutes. Remove from heat and set aside.
  • Heat a little vegetable oil in a deep saucepan, sauté the rice for 2 minutes, pour in the bean broth, the beans, the spices, and the salt. Cover and cook on high heat for 10 minutes. Lower the flame and cook the Cuban rice for another 10 minutes.
  • Serve the congrí accompanied by fried pork and garnish with cilantro.
