  • 1 egg
  • 2 tablespoons breadcrumbs

  • 10 Manchego cheese, in cubes

  • In a bowl, mix the rice, parsley, egg, breadcrumbs, salt, and pepper until combined.
  • Take a portion of rice, place a cube of cheese in the middle, and shape the croquettes. Then, coat with breadcrumbs.
  • Fry the croquettes in enough oil for 3 minutes or until crispy.
  • Serve the rice croquettes, drizzle with tomato sauce, and accompany with salad.
