3 cups whole milk
2 1/2 limes, just the juice
1 pinch salt

Heat the milk over medium heat.
When it reaches a boil, add the lemon juice. Lower the heat and stir with a wooden spatula.
When the whey and milk have separated, strain it through a cheesecloth for 40 minutes.
Once it is well strained, you can add the salt.
