Ricotta

This homemade ricotta recipe is a great option for making it and creating different dishes with it. Quesadillas, sandwiches, or whatever you can think of. You decide what to combine it with.

  • 3 cups whole milk
  • 2 1/2 limes, just the juice
  • 1 pinch salt

  • Heat the milk over medium heat.
  • When it reaches a boil, add the lemon juice. Lower the heat and stir with a wooden spatula.
  • When the whey and milk have separated, strain it through a cheesecloth for 40 minutes.
  • Once it is well strained, you can add the salt.
