Salmon Patties with Creamy Coleslaw

  • 1 tablespoon olive oil
  • 2 tablespoons onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 500 grams salmon, skinless
  • salt and pepper
  • 1 egg
  • 1/4 cups breadcrumbs
  • 1 tablespoon lemon zest
  • 1 tablespoon dill, chopped
  • cooking spray
  • 1 bag Eva® Coleslaw Freshly salad
  • parsley , finely chopped, for garnish

  • In a skillet over medium heat, heat the olive oil and cook the onion, garlic, and salmon previously seasoned with salt and pepper. Once cooked, remove and cool.
  • Flake the salmon and mix in a bowl with the egg, breadcrumbs, lemon zest, and dill. Form patties using your hands.
  • Cook the patties in a skillet over medium heat, with a little cooking spray, until golden. Drain on paper towels and keep warm.
  • In a bowl, pour the contents of the Freshly Coleslaw by Eva ® and mix in the dressing, reserving a little for the end, season with salt and pepper.
  • On a plate, serve the creamy coleslaw, place the patties on top, add a tablespoon of the reserved dressing, and finish with finely chopped parsley. Enjoy
