Spanish Potato Omelette

  • 2 cups onion, in strips, thin
  • 2 cloves garlic, finely chopped
  • 2 potatoes, large, in thin slices
  • chile flakes, or dried red chili
  • 5 eggs, beaten in a bowl

  • 1 cup red bell pepper, canned, drained, for accompaniment

  • Pour enough olive oil into a deep skillet, then add the sliced onion, chopped garlic, and cook until the onion has a shiny tone. Add the potato in thin slices and integrate.
  • Pour a little more olive oil, enough to submerge the potato, then add some chili flakes to give a special touch to the preparation, as well as enough salt and pepper. Remember that the important thing is not to brown the potato, but simply to cook it in enough fat so that it feels soft, which will take you 5 to 10 minutes over low heat. If you wish, you can cover the skillet.
  • After the cooking time, turn off the heat and let the mixture cool, as before adding the egg the mixture must be warm. To speed this up, transfer the mixture to a bowl and wait for it to cool. Once the potato mixture is warm, pour in the beaten eggs and integrate perfectly.
  • Heat some olive oil over medium heat in a non-stick skillet, then pour in the mixture from the bowl and with a spatula loosen the edges a bit and move the center to integrate. Here you can adjust the seasoning with salt and pepper! When the mixture is halfway cooked, place a plate on top of the skillet to flip it, turn it over and place the uncooked side down, shape the edges with the spatula. Cook the potato omelette for an additional 2 minutes.
  • Serve the Spanish omelette and accompany with strips of bell pepper.
