Stuffed Beef Rolls with Mushrooms in Green Sauce

  • 1 tablespoon vegetable oil
  • 1/2 onions, in quarters
  • 2 cloves garlic
  • 8 tomatillos, in halves
  • 3 serrano chiles, in halves
  • 1/4 cups fresh cilantro
  • 1/2 cups chicken broth
  • salt and pepper
  • 1/2 tablespoons cumin
  • 1 tablespoon vegetable oil
  • 1/2 cups white onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 cup button mushrooms, in cubes
  • 1 cup Poblano chile strips
  • 1/2 cups ear corn
  • 800 grams beef cutlet
  • salt and pepper
  • 1 tablespoon vegetable oil
  • 1 cup Oaxaca cheese, shredded
  • corn kernels, for decoration
  • fresh cilantro, finely chopped, for decoration

  • For the sauce, in a medium pot heat the oil and fry the onion with the garlic, tomatoes, serrano chili, and cilantro until the vegetables soften. Add the chicken broth, salt, pepper, cumin and let it reduce by half. Cool slightly and blend until smooth.
  • Return the sauce to a simmer for about 10 minutes or until thickened. Keep warm.
  • For the filling, cook the onion and garlic in a skillet with a little oil. Add the mushrooms, strips, corn, salt, and pepper. Cook until the juices reduce, then cool.
  • On a cutting board, lay out the beef fillets, add salt and pepper, a bit of filling, and roll them up. Secure with a toothpick and season again with salt and pepper.
  • In a skillet over medium heat, heat the oil and fry the rolls until golden. Add the cheese, cover, and cook until melted.
  • On a serving plate, place some sauce and arrange the beef rolls, decorate with corn kernels and cilantro.
