Stuffed Chard Pancakes with Ham and Cheese

This chard pancake recipe is a different way to prepare chard, as they are filled with ham and panela cheese, then bathed in a tomato chipotle sauce.

  • 3 cups tomato, ground, for the sauce
  • 1/2 cups chipotle chile in adobo sauce, for the sauce
  • 2 cloves garlic, for the sauce
  • 1/2 onions, for the sauce
  • 8 chards, without stems, cleaned and disinfected
  • 350 grams panela cheese, thin slices
  • 350 grams turkey deli ham, in thin slices
  • 1/3 cups olive oil
  • salt and pepper
  • fresh cilantro, for decoration
  • Parmesan cheese, grated, for decoration

  • Wash and disinfect all the vegetables well.
  • Take a chard leaf and fill it with 2 squares of ham and 2 squares of panela cheese to form pancakes or squares of chard filled with ham and cheese.
  • Brown the pancakes on both sides in a skillet with a little oil and season.
  • Add the blended tomato, onion, garlic, and chipotle pepper to the blender and blend until a homogeneous mixture is obtained.
  • Pour the blender sauce into the skillet where we are browning the pancakes and cook for 5 more minutes; if necessary, season again.
  • Serve the chard pancakes on a plate and finish with grated parmesan and fresh cilantro leaves.
