  • 4 egg whites, for the battering
  • 4 egg yolks, for the battering
  • salt , for the battering
  • 1 tablespoon flour , for the battering
  • 4 Poblano chiles, roasted and peeled
  • Manchego cheese, grated
  • wheat flour
  • vegetable oil , for frying
  • 4 burrito-sized flour tortillas
  • skirt steak, roasted
  • refried beans
  • caramelized onion
  • guacamole, for serving

  • Lay the chiles out on a board and fill with Manchego cheese, flour the chiles and set aside.
  • In a mixer, add the egg whites and salt. Beat until they double in size. Once firm, add the egg yolks one by one, mixing gently and gradually adding the wheat flour.
  • Dip the stuffed chiles in the egg mixture, completely covering them, and fry in hot oil for 3 minutes. Drain on absorbent paper to remove excess oil. Set aside.
  • Place the burrito tortilla on a board, spread with beans, caramelized onions, skirt steak, and the stuffed chile, assemble the burrito and grill.
  • Serve the burrito and accompany with guacamole.
