1/2 cups Monterey Jack cheese, shredded, for the sauce

Heat a cast iron skillet over high heat and pour in the olive oil. Cook one side of the chicken breasts for 2 minutes, season with salt and pepper, flip them, and cook for 2 more minutes, season again, remove the breasts from the skillet and take the skillet off the heat.

Place the skillet in the Breville The Smart Oven™ Pro and cook at 180 °C for about 5 minutes, stirring constantly so that the sauce thickens slightly. Once it reaches the desired consistency, return the chicken breasts to the sauce to finish cooking for another 10 minutes or until they are perfectly cooked.
Remove the skillet from the Breville The Smart Oven™ Pro and serve directly at the table, add freshly ground pepper and garnish with oregano leaves. Serve the three-cheese chicken with bread.
