The Wellington fillet is a classic recipe of English cuisine; now we bring you a version with ingredients like mushrooms, spinach, walnuts, and almonds, which together create a perfect combination of flavor.
In a skillet over medium heat, heat the oil; cook the onion with the garlic. Add the spinach and mushrooms. Cook until the liquid reduces. Add the walnuts and almonds, season with salt, pepper, and thyme. Set aside and let cool.
On a floured surface, roll out the puff pastry, cut it into a rectangle size of 20 x 30 cm, add the previous filling, close it, brush with egg, and decorate with puff pastry.
Place on a baking sheet and bake for about 15 minutes or until golden. Slice and serve.
