Vegetarian Wellington Fillet

  • 2 tablespoons olive oil
  • 1/4 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 2 cups spinach, finely chopped
  • 3 cups button mushrooms, sliced
  • 1/3 cups pecans, finely chopped
  • 1/3 cups almonds, finely chopped
  • 1 sprig thyme, chopped
  • 500 grams puff pastry

  • 1 egg

  • Preheat the oven to 200° C.
  • In a skillet over medium heat, heat the oil; cook the onion with the garlic. Add the spinach and mushrooms. Cook until the liquid reduces. Add the walnuts and almonds, season with salt, pepper, and thyme. Set aside and let cool.
  • On a floured surface, roll out the puff pastry, cut it into a rectangle size of 20 x 30 cm, add the previous filling, close it, brush with egg, and decorate with puff pastry.
  • Place on a baking sheet and bake for about 15 minutes or until golden. Slice and serve.
