Asparagus and Zucchini Frittata

This recipe is a delicious dish of Asparagus and Zucchini Frittata. Not the easiest to prepare but equally a totally delicious flavor. Be sure to try it and share it with your whole family.

  • 1 teaspoon olive oil
  • 6 eggs, beaten
  • 1/3 cups whole milk
  • 1/2 teaspoons table salt
  • 1 zucchini, medium zucchini, washed and sliced
  • 5 stems asparagus, washed and cut
  • 1/3 cups cheddar cheese, shredded
  • ground peppers, fresh

  • Heat the oil in a non-stick skillet over low heat.
  • In a bowl, beat the eggs, milk, and salt until well combined.
  • Pour the egg mixture into the skillet and place the zucchini slices and cut asparagus stalks on top of the eggs.
  • Cover and continue cooking until the eggs are set.
  • Cook for approximately 7 minutes.
  • Sprinkle with shredded cheddar cheese, cover, and cook for another 3 minutes or until the cheese melts.
  • When serving, sprinkle with a little ground pepper.
