Asparagus and Zucchini Frittata

1 teaspoon olive oil
6 eggs, beaten
1/3 cups whole milk
1/2 teaspoons table salt
1 zucchini, medium zucchini, washed and sliced
5 stems asparagus, washed and cut
1/3 cups cheddar cheese, shredded
ground peppers, fresh

Heat the oil in a non-stick skillet over low heat.
In a bowl, beat the eggs, milk, and salt until well combined.
Pour the egg mixture into the skillet and place the zucchini slices and cut asparagus stalks on top of the eggs.
Cover and continue cooking until the eggs are set.
Cook for approximately 7 minutes.
Sprinkle with shredded cheddar cheese, cover, and cook for another 3 minutes or until the cheese melts.
When serving, sprinkle with a little ground pepper.
