  • 4 Poblano chiles
  • 1/2 cups onion
  • 1 cup yellow corn
  • 1 cup Manchego cheese, grated

  • 4 nopales

  • corn tortillas, for accompaniment
  • Mexican red rice, for accompaniment

  • Roast the poblano peppers, place them in a bag, and let them rest for 5 minutes.Remove the peppers from the bag and peel them. Remove the seeds and veins. Cut into thin strips and set aside.
  • In a bowl, mix the strips, onion, corn, manchego cheese, and salt.
  • Place a nopal on a sheet of wax paper, add two tablespoons of filling, and cover with another nopal. Season with salt and close the wax paper, as if it were a tamale.
  • Bake the nopal at 180 °C for 30 minutes.
  • Serve and accompany with tortillas and red rice.
