This coconut ceviche is delicious, refreshing, and very easy to prepare, making it ideal for a hot day. Also, there’s nothing better than enjoying it with Galletas Saladitas® Gamesa®, the perfect complement for any appetizer.
400 grams coconut, or 2 medium pieces, chopped into strips without skin
1/2 cups red onion
2 serrano chiles
1 cup cucumber
1 cup mango
2 tomatoes
salt
1/2 tablespoons oregano
1/4 cups lime juice, for marinating
3 tablespoons orange juice, for marinating
4 tablespoons extra virgin olive oil, for marinating
Coconut shell, half, drained, to serve the ceviche
cilantro, finely chopped, for decoration
1 avocado, sliced, for decoration
Salty Crackers® Gamesa®, for serving

Finely chop the onion, serrano chili, cucumber, mango, and tomato. Set aside.
Combine the coconut, red onion, serrano chili, cucumber, mango, and tomato in a bowl, then season with salt and oregano. Next, pour in the lemon and orange juice, then slowly add the olive oil. Mix well and refrigerate for 30 minutes, as this will help the flavors concentrate better.
Add the ceviche mixture inside the drained half of the coconut. Sprinkle with cilantro, decorate with avocado slices, and place Galletas Saladitas® Gamesa® around for serving.
