Mushroom Tacos al Pastor

  • 4 guajillo chiles, seedless and veinless, hydrated
  • 2 cloves garlic, grilled
  • 1 1/2 tablespoons apple cider vinegar
  • 3/4 cups orange juice
  • 1/4 cups achiote paste
  • 1/2 teaspoons cumin powder
  • 1 teaspoon black pepper
  • pinches salt
  • 2 cups oyster mushrooms, in thin strips
  • 3 tablespoons vegetable oil
  • taco-sized tortillas, hot
  • onion, finely chopped, for garnish
  • cilantro, finely chopped, for garnish
  • pineapple, grilled, in small triangles, for garnish
  • lime, to accompany
  • guacamole sauce, to accompany

  • Blend the guajillo chili, garlic cloves, achiote, apple cider vinegar, orange juice, cumin, black pepper, and salt for 5 minutes or until you obtain a homogeneous paste. Set aside.
  • Heat a skillet or grill over high heat, then pour in the oil and when it's hot, add the mushrooms, season with salt and pepper, and cook for 5 minutes. Pour in approximately 3 large tablespoons of the achiote mixture and continue sautéing for another 10 minutes until the mushrooms are dry and browned al pastor.
  • To form the mushroom tacos al pastor: Place 3 tortillas on a flat plate and serve two tablespoons of the mushrooms, garnish with cilantro, onion, grilled pineapple, and accompany with lime and guacamole sauce.
