Oat and Amaranth Meatballs

Vegetarian oat and amaranth meatballs. To try something tasty and different. A meal full of nutrients and a unique flavor that everyone at home will love.

  • 100 grams oats, cooked
  • 100 grams amaranth, cooked
  • 1/2 onions, finely chopped
  • 1/2 cups fresh cilantro, chopped
  • 1/2 cups bell pepper , finely chopped
  • 1 egg
  • 2 morita chiles, deveined and hydrated
  • 1/4 onions, for the sauce
  • 2 cups tomato sauce
  • 1 clove garlic

  • Drain the oats and amaranth and set aside.
  • Mix oats, amaranth, onion, cilantro, and peppers with the egg.
  • Form little balls with the mixture (I lightly fry them in butter so they hold their shape).
  • Blend the tomato sauce with the onion, garlic, and morita chili.
  • Strain the sauce and cook for 5 minutes in a saucepan, season to taste.
  • Add the meatballs and cook for 2 more minutes.
