  • 1/3 cups queso fresco, grated
  • 1/4 cups oats
  • 1/4 cups amaranth
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 tablespoon cilantro, finely chopped
  • salt and pepper
  • 3 tablespoons Oli de Nutrioli® olive oil
  • Italian dressing, for serving
