60 grams San Juan® egg whites
80 grams peas
50 grams potato
5 grams garlic
5 milliliters extra virgin olive oil
5 grams salt
5 grams pepper
2 saffron, (stigmas)
1 dried bay
1 sprig fennel
1/2 grams parsley
1/2 grams thyme
5 flowers, edible

Cut the potatoes into ½ cm slices, sauté in a pan until golden, add the chopped garlic and onion until they become translucent.
Add boiling water, the peas, season with the herbs, salt, pepper, and saffron, cover, and let cook for 15 more minutes. Remove the aromatic herbs.
When the potatoes are cooked, poach the San Juan Egg Whites and serve over the dish.
