Stew of Potatoes, Peas, and Egg White

A delicious stew of Egg Whites, peas, potatoes, and aromatic herbs. For those days when you don't feel like eating meat and crave a homemade and healthy stew. It's a perfect dish for a Sunday meal with family.

  • 60 grams San Juan® egg whites
  • 80 grams peas
  • 50 grams potato
  • 5 grams garlic
  • 5 milliliters extra virgin olive oil
  • 5 grams salt
  • 5 grams pepper
  • 2 saffron, (stigmas)
  • 1 dried bay
  • 1 sprig fennel
  • 1/2 grams parsley
  • 1/2 grams thyme
  • 5 flowers, edible

  • Cut the potatoes into ½ cm slices, sauté in a pan until golden, add the chopped garlic and onion until they become translucent.
  • Add boiling water, the peas, season with the herbs, salt, pepper, and saffron, cover, and let cook for 15 more minutes. Remove the aromatic herbs.
  • When the potatoes are cooked, poach the San Juan Egg Whites and serve over the dish.
