Vegan Adobo Mushroom Tacos

If you like tacos and want a different option for daily meals without animal protein, cook these delicious vegan mushroom tacos made with guajillo chili marinade and morita chili, served in corn tortillas with beans, tomato, and cilantro.

  • 4 guajillo chiles, deveined, for the marinade
  • 4 morita chiles, deveined, for the marinade
  • 1 cup water, hot
  • 1/4 white onions, for the marinade
  • 2 cloves garlic, for the marinade
  • 1/4 cups white vinegar, for the marinade
  • 1 teaspoon allspice berry, for the marinade
  • 1 teaspoon cumin, for the marinade
  • 1/4 cups orange juice, for the marinade
  • 1 tablespoon olive oil
  • 1 cup white onion, sliced
  • 2 cups button mushrooms, sliced
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 8 corn tortillas
  • 3/4 cups refried beans, or just crushed
  • avocado, cut into slices
  • tomato, cut into slices
  • fresh cilantro

  • In a bowl, soak the chiles in hot water until soft, set aside.
  • Blend the soaked chiles with a little of the liquid, onion, garlic, vinegar, pepper, cumin, and orange juice until you get a smooth marinade.
  • Heat a skillet over medium heat with the oil and cook the onion until it is shiny, add the mushrooms and the marinade, cook for 5 more minutes, season to taste with salt and pepper.
  • Heat the tortillas on a comal over medium heat. Once heated, add the beans.
  • Serve the marinated mushrooms over the tortillas, garnish with avocado, tomato, and cilantro. Enjoy.
