Vegan Quinoa Bowl

  • 1/2 cups quinoa, white
  • 1/2 cups quinoa, red
  • 1 cup sour cream, vegan cashew cream, for cilantro dressing
  • 1 cup fresh cilantro, blanched for dressing
  • 1 tablespoon garlic, powder, for the dressing
  • 1/4 cups lime juice, for cilantro dressing
  • 1 serrano chile, for cilantro dressing
  • 1 tablespoon vegetable oil, of avocado
  • 2 tablespoons garlic, finely chopped
  • 1/2 cups onion, finely chopped
  • 1 cup black beans, whole, cooked
  • 1 cup artichoke heart
  • 1 cup bell pepper, colored, cut into cubes
  • 1 pinch salt
  • 1 pinch pepper
  • 1 avocado, cut into slices
  • 1 cup cherry tomato, cut in half
  • 1/4 cups fresh cilantro, for serving
  • 1/4 cups tortillas, in strips and fried, for serving

  • Boil the water in a pot and cook the quinoa for about 15 minutes or until it pops. Strain and set aside.
  • For the dressing, blend the vegan cream with the cilantro, garlic powder, lime juice, and serrano chili until all ingredients are combined. Set aside.
  • Heat a skillet over medium heat with the oil and sauté the onion, add the garlic, beans, artichoke, and peppers, and cook for a few minutes. Add the quinoa, season to your liking.
  • Serve the previous preparation in a bowl and decorate with avocado, tomatoes, cilantro leaves, dressing, and tortilla. Enjoy.
