  • 50 grams achiote
  • 2 cloves garlic, roasted
  • 1/4 onions, roasted
  • 1 1/2 cups orange juice, sour
  • 1/4 tablespoons cumin seeds, roast
  • 1/2 tablespoons oregano
  • 3 cups button mushrooms
  • 2 tablespoons vegetable oil
  • 1/2 cups white onion, finely chopped
  • 150 grams vegetable shortening, for the dough
  • 4 cups masa mix for tamales, for the dough
  • 1 cup vegetable broth, for the dough
  • 1 tablespoon baking powder, for the dough

  • For the marinade, blend the achiote with garlic, onion, orange juice, cumin, and oregano.
  • In a medium skillet, heat the oil and sauté the onion, add the mushrooms, cook for 3 minutes or until they start to release their juices, and pour in the marinade. Cook for 5 minutes and season with salt and pepper to taste. Set aside.
  • For the dough, beat the lard until creamy, gradually add the masa harina alternating with the vegetable broth, add the baking powder and salt, and beat until well combined and you have a smooth and soft dough.
  • Roast the banana leaves on a griddle to soften them.
  • Place a little dough on the roasted banana leaf, add the mushrooms, and fold the leaf like a tamale.
  • Place the tamales in a steamer with water and cook for 40 minutes or until cooked through.
  • Serve with pickled onions and a refreshing drink.
