  • 1/2 cups red onion, finely chopped
  • 1 cup tomato, in small cubes
  • 1 cup carrot, in small cubes
  • 1 cup cucumber, in small cubes
  • 1/2 cups lime juice
  • 1/2 cups olive oil
  • 1/4 cups cilantro, finely chopped
  • 1/4 cups serrano chile, finely chopped
  • salt and pepper
  • 1 cup avocado, in small cubes
  • tortilla chips, for serving

  • In a bowl, mix the onion, tomato, carrot, cucumber, lime juice, olive oil, salt, and pepper. Let marinate for 1 hour.
  • Serve the vegetable ceviche in a bowl, garnish with avocado, and accompany with tortilla chips.
