Vegetarian Meatloaf with Granola

  • 1 cup Kellogg’S® granola ancestral grains; sunflower seeds, amaranth and raisins
  • 2 tablespoons chia seeds
  • 2 1/2 cups water, hot
  • 2 tablespoons vegetable oil
  • 1 cup white button mushrooms, washed and disinfected
  • 1 white onion
  • 4 cloves garlic
  • 1 cup arugula, washed and disinfected
  • 1 teaspoon oregano
  • 2 cups quinoa
  • salt, to taste
  • pepper, to taste
  • 1/2 cups flour
  • 3/4 cups barbecue sauce

  • Preheat the oven to 180°C.
  • Finely chop the onion, garlic, and arugula. Cut the mushrooms into quarters. Add the oil to a hot skillet and add the onion, garlic, mushrooms, and arugula. Cook for a few minutes until the mushrooms have released all their liquid.
  • Place the water in a pot and bring it to a boil. Add the quinoa and let it cook for 15 minutes with the lid on. Remove the lid and, using a fork, fluff the quinoa and cover again for 7 minutes.
  • Place Kellogg’s® Ancient Grains Granola; sunflower seeds, amaranth, and raisins in the processor. Transfer the cooked vegetables, quinoa, and Kellogg’s® Ancient Grains Granola; sunflower seeds, amaranth, and raisins to a bowl and mix until everything is combined. Season with salt, pepper, and oregano.
  • Incorporate the flour and mix. Place parchment paper in a loaf pan and pour the mixture in, spreading it with a spoon to make it even.
  • Add a bit of barbecue sauce and bake at 180°C for 30 minutes. Halfway through baking, take the cake out of the oven and brush a bit more barbecue sauce on top.
  • Remove from the oven and take the vegetarian meatloaf out of the pan. Serve with the remaining barbecue sauce.
