Authentic Torta Ahogada

A staple from the Mexican city of Guadalajara, torta ahogada is a sandwich of sorts prepared by filling a salted and crunchy birote roll with pork carnitas and dunking it in a flavorful tomato-based sauce.   • 1/8 cups árbol chile, for the chile de árbol salsa
  • 2 cups water, for the chile de árbol salsa

  • 1 bay leaf, for the tomato sauce
  • 1/4 teaspoons cumin, for the tomato sauce

  • 4 birote rolls
  • 1 cup refried beans
  • 2 cups pork carnitas

  • For the chile de árbol salsa: In a small pot over high heat, heat water and cook chiles until tender. Drain and set aside. In a blender, combine chiles, garlic, sesame seeds, vinegar, cumin, marjoram, and salt and blend to a sauce. Set aside.
  • For the tomato sauce: In a blender, combine tomatoes, onion, clove, garlic, oregano, bay leaf, cumin, and salt and blend until smooth. Set aside.
  • In a small pot over medium heat, cook tomato sauce for 15 minutes or until cooked through. Set aside.
  • On a chopping board, spread refried beans on the birote rolls and stuff with carnitas. Spoon tomato sauce over the authentic torta ahogada and top with chile de árbol salsa, red onion, and avocado.
