  • 1/4 onions, boiled, for the sauce
  • 1 clove garlic, boiled, for the sauce
  • 1/4 cups cilantro, boiled, for the sauce
  • 1 morita chile, boiled, for the sauce

  • 250 grams dried charales, for the pancakes
  • 1/2 cups panela cheese, grated, for pancakes
  • 8 eggs, separated, for the pancakes

  • Blend the tomatoes or tomatillos, onion, garlic, cilantro, morita chile, salt and pepper until you obtain a sauce. Booking.
  • For the charal pancakes: place the charales, panela cheese, eggs and salt in a bowl. Mix until everything is well integrated.
  • Heat a little oil in a frying pan, add a little of the charales mixture and cook for 3 minutes on each side. Booking.
  • Heat oil in a pot, pour the sauce and cook for 5 minutes. Add the dried charales pancakes and the nopales and cook for 2 more minutes.
