Birria Pizza

Birria is a traditional Mexican deeply spiced braised made with beef, goat, or chicken marinated in an appetizing adobo sauce prepared with a blend of chiles. This homemade pizza features drool-worthy layers of birria made from scratch and shredded cheese and is topped with avocado and chives for a unique dish you will love.

  • vegetable oil, for the adobo sauce
  • 1 onion, cut into large chunks, for the adobo sauce
  • 10 cloves garlic, for the adobo sauce
  • 8 Roma tomatoes, for the adobo sauce
  • 1 tablespoon pepper, for the adobo sauce
  • 1 teaspoon cumin, for the adobo sauce
  • 1 teaspoon dried thyme, for the adobo sauce
  • 1 teaspoon dried oregano, for the adobo sauce
  • 1/4 cinnamon sticks, for the adobo sauce
  • 3 bay leaves, for the adobo sauce
  • 3 árbol chiles, trimmed and seeded, for the adobo sauce
  • 4 guajillo chiles, trimmed and seeded, for the adobo sauce
  • 2 ancho chiles, trimmed and seeded, for the adobo sauce
  • 3 tablespoons white vinegar, for the adobo sauce
  • 1 1/2 cups chile soaking water, for the adobo sauce
  • 800 grams beef shank
  • 1 kilo beef rib
  • 1/2 onions, for cooking the meat
  • 1 garlic head, for cooking the meat
  • 1 bouquet garni, for cooking the meat
  • water, for cooking the meat

  • 3 cups Manchego cheese, shredded

  • For the adobo sauce: In a deep skillet heat vegetable oil over medium heat. Add onion and garlic and cook until translucent. Add tomatoes and cook until they fall apart. Add pepper, cumin, thyme, oregano, cinnamon, bay leaf, árbol chile, guajillo chile, ancho chile, white vinegar, and a bit of water to soften the ingredients. Take your time to cook each of the ingredients. It should take about 10 minutes.
  • Transfer ingredients to a blender and blend until smooth. Set aside.
  • For cooking the meat: In a pressure cooker, place water, onion, garlic, meat, and bouquet garni. Once the pressure cooker whistles, lower the heat to medium and cook for 40 minutes. Remove from heat. Cool down and remove the lid once the pressure comes down. Add adobo sauce and season with salt. Cook uncovered for 10 more minutes to allow the flavors to meld and for a more flavorful consommé.
  • Remove meat from consommé and chop it. Set meat and consommé aside.
  • On a baking sheet, place a burrito-size tortilla. Place birria and shredded cheese on top. Cover with another tortilla and sprinkle shredded cheese on top.
  • Bake birria pizza at 392° F for 10 minutes or until golden brown.
  • Garnish birria pizza with thinly sliced avocado and chives.
  • Serve birria pizza with consommé.
