Classic Falafel

Falafel is a traditional Arab dish, which is enjoyed in various Middle Eastern countries and even in India. This dish consists of small croquettes prepared with chickpeas or beans, although their preparation varies according to the country or region. In the American continent it became known thanks to migration and aromatic herbs and spices have been added to it. Falafel is delicious, a vegetarian dish and ideal for sharing.

  • 3 cups chickpeas
  • water, for the chickpea
  • 1 cup onion, in medium cubes
  • 6 cloves garlic
  • 1/2 bunches cilantro, leaves
  • 1/2 bunches parsley, leaves
  • 1/4 bunches peppermint, leaves
  • 2 tablespoons cilantro seeds, ground
  • 2 tablespoons cumin, ground
  • 1 teaspoon turmeric
  • 1 tablespoon baking powder
  • salt
  • pepper

  • Soak the chickpea the day before: Place the chickpea in a bowl and cover with water, about 3 fingers above. Let stand in a cool place for 24 hours and cover to avoid dust and impurities.
  • Once the soaking time has passed, drain the chickpea and rinse with a stream of cold water.
  • Place the chickpea in a processor along with the onion and garlic, grind for 3 minutes. Then add the coriander, parsley, mint, coriander seed, cumin, turmeric, baking powder, enough salt and pepper. Grind for 6 more minutes or until everything is completely integrated.
  • With the help of your hands, form spheres of 5 centimeters in diameter. Fry over medium heat in a pan with plenty of hot vegetable oil and then drain on absorbent paper. Reservation.
  • Serve the falafel with hummus, jocoque, pita bread, vegetables and enjoy.
