Cochinita Pibil Panuchos

A traditional Yucatecan specialty, panuchos are masa-based stuffed tortillas featuring juicy and perfectly spiced cochinita pibil, refried beans, and pickled red onions. Prepare these delish cochinita pibil panuchos by letting cloves, allspice berries, garlic cloves, achiote paste, and pork leg team up to let the magic happen!

  • 1 kilo pork leg
  • 4 tablespoons achiote paste, 1.7 oz, for the marinade
  • 1/4 onions, for the marinade
  • 2 cloves garlic, for the marinade
  • 3 allspice berries, for the marinade
  • 1 teaspoon cumin, for the marinade
  • 2 cloves, for the marinade
  • 2 1/2 cups orange juice, for the marinade
  • 1/4 cups vinegar, for the marinade
  • salt, for the marinade
  • 1/2 kilos masa dough, for the panuchos
  • 1 teaspoon salt, for the panuchos
  • 1 teaspoon baking powder, for the panuchos
  • 1/4 cups lard, for the panuchos
  • 1/2 cups water, for the panuchos
  • refried black beans, for the panuchos
  • red onions, with pickled Habanero chiles, for garnish

  • For the marinade: In a blender, combine achiote paste, onion, garlic, allspice berries, cumin, cloves, orange juice, vinegar, water, and salt, and blend until smooth.
  • Place the pork in a banana leaf-lined steamer. Pour the marinade into the steamer. Cover and let sit for 30 minutes. Cook for 90 minutes over medium heat, Remove from heat and shred pork. Set pork and pork drippings aside.
  • For the panuchos: In a bowl, mix masa dough, salt, baking powder, and water until a soft texture is obtained. Add a bit of water if needed.
  • Form masa dough balls with your hands. Using a tortilla press, flatten into 0.07-inch-thick masa dough discs of about 3.9 inches in diameter. On a griddle, cook panuchos for 3 minutes on both sides. Using a knife, cut panuchos open along the edge and stuff with refried beans. In a skillet with hot oil, fry stuffed panuchos for 3 minutes until golden brown.
  • Serve panuchos topped with chochinita pibil. Garnish cochinita pibil panuchos with pickled red onions.
