Oyster Mushroom Tacos

  • 2 tablespoons vegetable shortening
  • 3 cups oyster mushrooms
  • 1/4 white onions
  • 2 cloves garlic
  • 1 orange
  • 2 tablespoons white vinegar
  • 1/4 cups soy milk
  • 3 allspice berries
  • 1 tablespoon coarse salt
  • 2 leaves bay
  • 5 cilantro seeds
  • 1/4 cups cilantro, stalks
  • 3 cloves
  • 1 cup water
  • vegetable oil
  • corn tortillas
  • 1/4 cups onion, finely chopped
  • 1/4 cups fresh cilantro, finely chopped
  • salsa, for serving
  • lime, for serving

  • In a pot over medium heat melt vegetable shortening. Add oyster mushrooms, onion, garlic, orange, white vinegar, soy milk, allspice, coarse salt, bay leaf, cilantro seeds, cilantro root, and water. Mix and cook over high heat for 15 minutes stirring occasionally. Strain.
  • In a skillet with oil fry oyster mushrooms until brown. Season with salt and pepper.
  • On a chopping board finely chop mushrooms.
  • Heat corn tortillas, make oyster mushroom tacos, and garnish with onion, cilantro, salsa, and lime.
