Veggie Burger

  • 1 cup yellow corn kernels, frozen 
  • 1 cup broccoli, frozen 
  • 1 cup pinto beans, cooked, drained
  • 1 cup chickpeas, cooked
  • 1/4 onions
  • 1/4 cups fresh cilantro
  • 1 tablespoon parsley
  • 1 teaspoon cumin
  • 1/2 teaspoons pepper
  • 1/2 teaspoons turmeric
  • 1 teaspoon onion powder
  • 1 tablespoon black sesame seeds
  • 1 tablespoon sesame seeds
  • 1 1/4 cups whole-wheat flour
  • 1 green onion, stemmed, for the dressing 
  • 1 clove garlic, for the dressing
  • 1/2 cups chickpeas, for the dressing
  • 1 cup sun-dried tomatoes, for the dressing
  • 1 tablespoon mustard, for the dressing
  • 2 tablespoons lime juice, for the dressing
  • 1/4 cups olive oil, for the dressing
  • 4 hamburger buns, vegan
  • tomato, sliced, for garnish
  • arugula, for garnish 
  • red onion, for garnish 
  • cherry tomato, for garnish 
  • potato wedges, for garnish

  • In a food processor, combine yellow corn kernels, broccoli, pinto beans, chickpeas onion, cilantro, parsley, cumin, pepper, turmeric, onion powder, and sesame seeds and grind to a purée.
  • Transfer previous mixture to a bowl. Add whole-wheat flour and mix thoroughly with a wooden spatula.
  • Form patties. In a skillet, heat a bit of vegetable oil over medium heat and cook patties until golden brown. Set aside.
  • For the dressing: In a food processor, combine onion, garlic, chickpeas, sun-dried tomato, mustard, lime juice, and olive oil and grind to a purée.
  • Spread a bit of dressing on each bun heel. Stack delicious vegan burger with patties, arugula, tomato slices, and red onion. Place bun crown on top. Garnish delicious vegan burger with a cherry tomato skewer on top of the bun crown. Serve delicious veggie burger with potato wedges.
