Fish fillet a la Veracruzana

  • 1 kilo red snapper fillet
  • 2 tablespoons lime juice
  • 2 cloves garlic
  • 6 tablespoons olive oil
  • 3 onions, chopped
  • 4 tomatoes, peeled and chopped
  • 2 cups fish broth
  • 1/2 cups olives
  • 1 tablespoon capers
  • 6 pickled Jalapeño chiles
  • salt, and pepper to taste

  • Wash and dry the fish inside and out, salt and pepper to taste and add the lime juice.
  • Fry the garlic and onion in the olive oil and let the onion sauté. Add the tomato and let it simmer over low heat.
  • Add the fish broth, olives, capers, peppers and put the fish in the sauce, raise the heat and once it boils, lower the heat again and let it cook until it is well cooked and the sauce is thick.
