Fish Gringa

Dare to try something different this Lent! Mexican food is very varied, so give it a twist and prepare this delicious fish gringa, which will be a success if you accompany it with the incomparable flavor of Apple-flavored Sidral Mundet®.

  • 4 guajillo chiles, clean and hydrated
  • 1 ancho chile, clean and hydrated
  • 1/4 cups pineapple juice
  • 1 clove garlic
  • 1/4 onions
  • 2 cloves
  • 1 pinch cumin
  • salt
  • vegetable oil
  • 3 cups white fish, in medium cubes
  • 8 flour tortillas
  • 2 cups Manchego cheese, grated
  • green salsa
  • onion, finely chopped
  • cilantro, finely chopped
  • pineapple, in cubes
  • Mundet® Apple Cider

  • Blend the guajillo chiles, the ancho chile, the pineapple juice, the garlic cloves, the onion, the cloves, the cumin and the salt until it forms a marinade.
  • Sauté the fish in a hot pan with oil for 3 minutes, add the marinade and cook for 5 minutes or until well cooked.
  • Heat a tortilla on a griddle, add the cheese and seafood, close with another tortilla and cook for 2 minutes on each side or until the cheese is melted.
  • Serve the fish gringa and accompany it with green sauce, onion, cilantro, pineapple and Apple Flavor Mundet® Sidral.
