Potato & Chorizo Meatloaf

An easy and yielding recipe, this potato & chorizo meatloaf will save you during busy weeknights.   • 500 grams ground beef
  • 500 grams ground pork
  • 1 cup onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1 cup chorizo, fried
  • 1/2 cups parsley, finely chopped
  • 1 teaspoon cumin powder
  • salt

  • 4 potatoes
  • 1/2 cups Manchego cheese
  • 3 tablespoons butter
  • 1/4 cups sour cream
  • 1 teaspoon pepper
  • 1/2 cups cow's milk
  • salad, for serving

  • In a bowl mix ground meat, onion, garlic, chorizo, parsley, cumin, salt, and pepper. Place in a baking dish and bake for 35 minutes at 356 °F.
  • In a bowl, mash potatoes. Add Manchego cheese, butter, cream, pepper, and milk.
  • Place mashed potatoes in a piping bag with a drop flower nozzle and form rosettes over the meatloaf as shown in the video. Bake for 5 more minutes until golden-brown.
  • Serve potato & chorizo meatloaf hot with salad on the side.
