Shrimp pancakes

This rich dish of shrimp pancakes in tomato sauce is perfect for Lent, they are very easy to prepare and delicious. They are a rich option for seafood lovers.

  • 250 grams dried shrimp
  • 50 grams fava beans, milled
  • 5 eggs
  • 5 tomatoes
  • 5 nopales
  • 1 sprig fresh cilantro
  • 1/4 cups onion
  • 1 clove garlic
  • salt and pepper
  • 200 milliliters vegetable oil

  • Place the shrimp to toast in a pan for 4 minutes and remove from heat, then grind in the blender until it is powdered and stir with the ground beans.
  • The nopales are cleaned and put them in small squares and put to cook in the pressure cooker for about 15 minutes with little water and a pinch of salt; Once the time has passed, the nopales are drained and reserved in a saucepan.
  • The egg whites are beaten until they are ready with nougat, then the yolks are added and the mixture is continued.
  • Add to the egg the shrimp, the ground beans and stir until there is a homogeneous mixture.
  • Heat a pan with oil. After a few minutes with a spoon take the shrimp mixture and put it in the pan to fry and then it is done with all the mixture until finished and put on paper napkins to remove the excess oil.
  • Wash tomatoes and blend with the onion, garlic and place over medium heat for about 10 minutes when it boils add the nopales and shrimp pancakes. Let cook for another 10 minutes, remove from heat and serve.
