  • 1/2 teaspoons thyme

  • 1/2 teaspoons clove
  • 1/2 teaspoons coarse salt
  • 1 tablespoon red wine vinegar
  • 1 avocado
  • 1/4 cups almond milk
  • 1 teaspoon lime juice
  • 1/2 teaspoons salt
  • 8 corn tostadas
  • 1/2 cups refried beans

  • For the vegan chorizo: In a food processor, combine chickpeas and pecans. Grind to a thick consistency without fully grinding.
  • In a skillet, add olive oil and fry onion. Add garlic and ground mixture. Add paprika, cumin, chile powder, thyme, cinnamon, cayenne pepper, pepper, clove, coarse salt, and red wine vinegar. Cook for 10 minutes until all ingredients are incorporated.
  • For the avocado cream: In a food processor, combine avocado, almond milk, lime juice, and salt. Grind to a creamy and velvety purée.
