Chipotle Roast Chicken

  • 1/4 cups butter, at room temperature
  • 1 clove garlic, finely chopped
  • 2 tablespoons Knorr® granulated chicken bouillon
  • 3 tablespoons chipotle chile powder
  • 1 tablespoon ground oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground white pepper
  • 1 chicken, skin-in, about 3.3 lbs
  • 1 cup baby carrot
  • 1 ear corn, cut into quarters
  • 6 Jalapeño chiles, reds and greens, cut in half
  • 2 zucchinis, cut into chunks
  • 1 tablespoon olive oil

  • Preheat the oven to 428 °F.
  • In a bowl, mix butter, garlic, Knorr® granulated chicken bouillon, chipotle chile powder, oregano, cumin, and chile.
  • Brush chicken with previous mixture. Place it on a baking sheet.
  • On the same baking sheet, arrange baby carrots, corn, chiles, and zucchini. Sprinkle olive oil. Season with Knorr® granulated chicken bouillon, oregano, and pepper.
  • Bake for 30 min at 428 °F. Lower oven temperature to 356 °F. Keep cooking for 40 more minutes or until cooked through.
  • Serve chipotle roast chicken with vegetables and enjoy.
