Authentic Burrito Norteño

Regardless of their filling, burritos are a beloved dish both in northern Mexico and throughout the United States. However, this authentic burrito norteño recipe is definitely a must-try! Stuffed with juicy meat, black beans, guacamole, and an out-of-this-world chile de árbol salsa, this burrito makes a seriously satisfying meal for everyone.

  • 500 grams skirt steak

  • 2 tomatoes
  • 1/4 cups árbol chile
  • 1 clove garlic

  • 1 cup refried beans
  • 1 cup guacamole
  • 1 cup asadero cheese
  • 3 tortillas, burrito-sized

  • For the meat: Season the flank steak with salt and pepper.
  • Heat a charcoal grill or broiler over high heat. Put the flank steak and cook for about 12 minutes, turning once every five minutes to the desired degree of doneness and set aside.
  • For the chile de árbol salsa: Bring a pot of water to a boil. Add onion, garlic, tomatoes, árbol chiles, and cook for 10 minutes.
  • Transfer tomato, onion, garlic, and árbol chiles to a blender. Blend to a coarse purée. Add salt and pepper to taste, and set aside.
  • For assembling the burritos: Place some meat down the center of each tortilla. Top with guacamole, beans, and cheese, then fold in sides and roll to seal completely.
  • Heat the burrito on the grill for 3 minutes just to melt the cheese.
