Pork Loin Torta

No idea what to do with those holiday leftovers? Here’s an easy and classic recipe that will help you with that. A hearty torta stuffed with refried beans, avocado, tomatoes, pickled chiles, and leftover pork loin. Nothing is more flavorsome than a classic torta prepared with the right ingredients!

  • 4 guajillo chiles, charred and rehydrated, for the red sauce
  • 2 cloves garlic, roasted, for the red sauce
  • 1/4 onions, roasted, for the red sauce
  • 1 cup chicken broth, for the red sauce
  • 1 kilo pork loin, leftovers
  • 1/2 cups butter
  • 1 cup onion, sliced
  • salt
  • pepper
  • 1 teaspoon oregano
  • 6 pieces telera roll
  • mayonnaise
  • refried beans
  • avocado
  • tomato
  • pickled chiles

  • Shred pork loin and set aside.
  • Combine chiles, garlic, onion, and chicken broth in a blender and blend until smooth. Set aside.
  • In a skillet, heat butter over medium heat and fry onion until translucent. Add pork loin and red sauce. Season with salt, pepper, and oregano and cook for 15 minutes over low heat.
  • Cut telera rolls in half, spread mayonnaise on one half of the telera roll and refried beans on the other half. Add pork loin and top with avocado and chiles.
  • Pair pork loin torta with lemonade.
