  • 2 kilos beef shank
  • 750 grams beef rib
  • banana leaf
  • 6 ancho chiles, roasted and hydrated, for the marinade
  • 5 morita chiles, roasted and hydrated, for the marinade
  • 8 guajillo chiles, roasted and hydrated, for the marinade
  • 2 tomatoes, roasted, for the marinade
  • 3 bay
  • 6 avocado leaves
  • 1 tablespoon allspice berry
  • 1/4 cinnamon sticks
  • 4 cloves
  • 1 teaspoon dried thyme
  • 1 onion, roasted, for the marinade
  • 4 garlic cloves , roasted, for the marinade

  • Spread the beef shank and ribs on a tray to season with salt and pepper. Set aside.
  • Blend the chilies, water, cumin, clove, cinnamon, thyme, bay leaf, avocado leaves, onion, garlic, and tomatoes. Set aside.
  • Spread the banana leaves in a pot, add the meat, and pour the marinade. Repeat the procedure until finished.
  • Cover with banana leaves and cook over medium heat for 3 hours.
  • Serve the barbecue in a deep plate, make tacos, and garnish with lime, onion, and cilantro.
