1 cup green bell pepper, chopped, for the dressing
2 cups lettuce, fresh viva Eva® chopped, for the dressing
1 clove garlic, for the dressing
1/2 cups Parmesan cheese, grated, for the dressing
1 teaspoon salt, for the dressing
1/2 teaspoons pepper, for the dressing
4 tablespoons lime juice, for the dressing
1/2 cups olive oil, for the dressing
1 package pasta, farfalle (500 g) cooked and chilled
2 mangoes, in cubes
2 avocados, in cubes
1/2 cups peanuts, toasted
1 tablespoon salt
1 tablespoon fresh thyme

For the dressing, process all the ingredients in a food processor, adding the olive oil in a steady stream, until you obtain a smooth and creamy mixture.
In a bowl, mix the cold pasta with the avocado, mango, peanuts, salt, pepper, and dressing.
