Cold Pasta with Asparagus

A very complete pasta that you can take to the office, a picnic, or a meal is this recipe for Cold Pasta with Asparagus.

  • 250 grams penne pasta, or your favorite pasta
  • 300 grams asparagus
  • 1/2 limes, zest and juice
  • cherry tomatoes, cut in half
  • basil, for garnish
  • salt
  • pepper

  • Cook the pasta according to the package instructions. Two minutes before the cooking time is up, add the trimmed asparagus cut into pieces. Boil everything together for the last 2 minutes, then reserve a cup of the cooking liquid from the pan before draining the pasta and vegetables.
  • Transfer the pasta and asparagus to a bowl with ice and cold water. Let it sit for 5-10 minutes.
  • Add the lemon zest, lemon juice, cherry tomatoes, salt, and pepper.
  • Garnish with a basil leaf.
