Hawaiian Pasta with Ham and Pineapple

  • 1 yellow bell pepper, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 cup deli ham, cut into cubes
  • 1 cup panela cheese, cut into cubes
  • 1 cup elbow pasta, cooked
  • 4 tablespoons pickled chiles, finely chopped
  • 1/2 cups red onion, finely chopped
  • salt and pepper
  • 1 cup pineapple, cut into cubes
  • 2 tablespoons mayonnaise
  • 2 tablespoons mustard
  • fresh parsley

  • Add the chili vinegar, mustard, mayonnaise, and salt and pepper to a bowl, mixing very well.
  • Add the cubed cheese, red pepper, yellow pepper, red onion, a few pickled chilies, cubed pineapple, cubed ham, and finally add the pasta, folding everything together gently to avoid breaking the pasta.
  • Chop a bit of fresh parsley and add it to the pasta.
  • Garnish the Hawaiian pasta with fresh parsley leaves and serve cold.
