Pasta Salad with Salami

This delicious pasta salad is a tasty and versatile dish. You can use it for lunch, dinner, or to pack for school lunch.

  • 400 fusilli pasta
  • 3 cups cherry tomato
  • 250 grams salami, in cubes
  • 250 Manchego cheese, in cubes
  • 1/4 cups black olives, sliced
  • 1/4 cups baby corn, sliced
  • 1/2 cups olive oil
  • 1/4 cups balsamic vinegar
  • salt
  • pepper

  • Bring a large pot of salted water to a boil to cook the pasta.
  • Once the water is boiling, cook the pasta for 6-7 minutes or until al dente, then drain the pasta immediately and rinse with cold water to cool.
  • In a deep bowl, mix the pasta with the tomato, salami, cheese, olives, and corn.
  • In another deep bowl, make the vinaigrette by mixing the olive oil, balsamic vinegar, and seasoning with salt and pepper.
  • Add the dressing to the pasta and mix well.
  • Cover and refrigerate for at least 30 minutes before serving.
