First of all, put the butter, lemon juice, and lemon zest in a large skillet over medium-high heat. Once the butter has melted, let it boil for half a minute. Add evaporated milk. Season with salt and pepper and cook, stirring frequently, until the milk has reduced by half. Meanwhile, bring a pot of water to a boil over high heat. When it boils, add the salt and the pasta, stirring well.
Now, when it is cooked al dente, drain and transfer to the skillet. Mix well with the sauce and add the grated cheese. Serve immediately.
