Creamy Lemon Pasta

  • 10 ounces fettuccine pasta, type fettuccine
  • 2 ounces unsalted butter
  • 1 teaspoon lime zest
  • 2 teaspoons lemon juice
  • 1 cup evaporated milk
  • Parmesan cheese
  • salt , freshly ground
  • pepper, freshly ground

  • First of all, put the butter, lemon juice, and lemon zest in a large skillet over medium-high heat. Once the butter has melted, let it boil for half a minute. Add evaporated milk. Season with salt and pepper and cook, stirring frequently, until the milk has reduced by half. Meanwhile, bring a pot of water to a boil over high heat. When it boils, add the salt and the pasta, stirring well.
  • Now, when it is cooked al dente, drain and transfer to the skillet. Mix well with the sauce and add the grated cheese. Serve immediately.
