Creamy Mac & Cheese with Yogurt

This macaroni and cheese recipe is delicious and very healthy, serve it to start any meal.

  • 1/2 cups Oikos® greek style yogurt
  • 2 cups elbow pasta
  • 2 cups cheddar cheese, grated
  • 2 cups spinach
  • salt and pepper

  • Cook the elbow macaroni for 8 to 10 minutes.
  • Place the spinach in a colander, and drain the pasta over the spinach to wilt it slightly.
  • Save ½ cup of the pasta water. Return the elbow macaroni and spinach to the pot.
  • Add ¼ cup of the pasta cooking water, add the cheese, and mix until melted.
  • Mix in the Oikos Greek Yogurt, salt, and pepper until creamy. If necessary, add the remaining water.
