Fettuccine with Chicken Fajitas

  • 1 package Luigi® Fettuccine
  • olive oil
  • 1 cup red onion, in medium cubes
  • 1 cup yellow bell pepper, in medium cubes
  • 1 cup red bell pepper, in medium cubes
  • 2 cups chicken breast, in medium cubes
  • 1 tablespoon chives, finely chopped
  • 1 cup button mushrooms, in quarters
  • salt
  • pepper
  • Manchego cheese, grated

  • Boil salted water in a pot, add De Luigi® Fettuccine pasta and cook for 9 minutes or until al dente. Drain and set aside.
  • Heat a little olive oil in a skillet over medium heat. Sauté the onion and yellow and red peppers for 3 minutes. Add the chicken, green onions, mushrooms, salt, and pepper. Cook for 5 more minutes.
  • Incorporate the De Luigi® Fettuccine into the pan with the vegetables and mix until all ingredients are combined. Turn off the heat, add the cheese, cover, and let the cheese melt.
  • Serve the pasta with chicken fajitas on a platter and garnish with a bit more green onion.
