Green Pasta

Delicious green pasta covered with a poblano chili sauce. With this sauce, we give a twist to classic Italian pasta to add a Mexican touch.

  • 250 grams spaghetti
  • 4 Poblano chiles, medium
  • 1 cup sour cream
  • 1 cube garlic
  • 1 tablespoon unsalted butter

  • Roast the chiles.
  • Remove the skin and seeds.
  • Blend the chiles, cream, and garlic cube in the blender, adding salt and pepper to taste.
  • In parallel, you can boil the pasta adding salt, a small tablespoon of oil, and two bay leaves.
  • In a pot, melt a tablespoon of butter, then pour in the poblano sauce, and when it starts to bubble, add the pasta and mix for one minute.
